Nasi Goreng with Fried Vegg

In Indonesia this dish is served with a variety of foods on the side. Vegan sides can include faux meats, lettuce, scrambled tofu and pretty much anything you have available. It can be as plain or as spicy as you like. This is a simple and not too spicy version. If you can find some Himalayan salt it is amazing stuff, it really tastes like egg!

Ingredients
  • Olive Oil
  • 1 Onion, diced
  • 1 garlic clove, minced
  • 1 red chilli, seeded (or more to taste)
  • 1 teaspoon Vegan Laksa paste
  • 1 teaspoon Palm Sugar
  • 1 tablespoon Vegan Soy Sauce
  • 3 cups Cooked Rice (preferably cooked the day before)
  • 1 tablespoon Spring Onion, sliced finely
  • Fried Vegg:
  • ½ block silken tofu
  • ½ cup Coconut Milk
  • 1 tablespoon Rice Flour
  • 3 teaspoons Corn Flour
  • ½ teaspoon Himalayan Salt (Amazing salt that tastes like Egg!)
  • I teaspoon Vegg
  • ¼ cup Water
Instructions
  1. In a wok or frypan add the oil, onion, garlic & chilli and cook until the onion is translucent. Add the laksa paste, soy, palm sugar and rice and mix it all together over a medium heat. Taste and add salt and pepper. Add the spring onion just as you remove from the heat.
  2. Fried Vegg Method:
  3. Blend the silken tofu, coconut milk, rice flour, corn flour and Himalayan salt in a food processor this is the egg ‘white’ As you will need the food processor for the egg ‘yolk’ remove the mixture from the processor and put into a bowl and set aside.
  4. Blend the Vegg and the water together, make sure you blend it well. Give it a couple of minutes to really bind together.
  5. Now put a non-stick frypan on a medium heat and spray liberally with cooking spray or use a good splash of oil. Get a large scoop of the white mixture and place it in the centre of the pan and using the back of a spoon spread it out in the shape of a large oval and make sure it is evenly spread.
  6. Using a teaspoon, place a spoonful of the Vegg in the centre of your egg ‘white’.
  7. Touch the ‘vegg’ gently to see if it is cooked through and remove from the pan and set aside.
  8. Assembly:
  9. To assemble the dish, push the rice into a dish/mould. I use a rice paddle to really push the rice in firmly. If using a plastic bowl, give it a quick rinse under some cold water as it will help when you turn it upside down for the rice to slide out. Turn out onto a plate, garnish with as many sides as you like and top with the fried vegg and some cracked pepper. Serve immediately.
